If you appreciate the aroma of habanero chillies but are not a big fan of heat, you can still bring the habanero flavour into your home and into your food with the Aji Dulce Amarillo. The plant itself has a rather rare form for chillies. It has very large leaves, a vigorous growth and is very productive in good conditions. The pods with their fruity aroma taste slightly sweet and ripen from green to a rich red. Since they have almost no heat, you can use them for salads or for tasty fillings. They also taste delicious fresh from the bush and if you like, you can even make an exotic jam.
Germination and growing
To get this variety to germinate, you should offer them an environment with a temperature between 21 and 28 °C. A heated greenhouse is ideal for this. Whether you pre-germinate the seeds in two layers of kitchen roll or let them grow directly in soil is entirely up to you. When you place the seedlings in pots, you should use a well-fertilised and airy soil and make sure that the water does not accumulate. Chilli plants need a lot of sun for their development and certain minimum temperatures for the ripening of the fruits. Place them in a suitable spot where they will get at least 6-8 hours of sun and plant them in pots rather than flower pots. This makes it easier to bring them indoors in early autumn on days with temperatures below 12 °C - so the fruits can still ripen despite the sometimes long ripening period.
