Jalapenos are the chillies most commonly used in food in the southern states of the USA and in Mexico. The name jalapeno is derived from the town of Xalapa (formerly Jalapa) in eastern Mexico and they are a cultivated form of the Spanish pepper. In their countries of origin, they are often smoked to dry and then called chipotle. If you have a smoker, why not try this too? Jalapenos are good eaten raw when green, but they become sweeter and more aromatic as they ripen. Of course, you can also use them perfectly for cooking, give them a tasty filling or pickle them. During ripening, jalapenos often develop dark spots (which disappear later) and fine cracks (usually lengthwise). This is quite natural and you don't need to worry about diseases.

Germination and growing

To get this variety to germinate, you should provide them with an environment with a temperature between 22 and 28 °C. A heated greenhouse is ideal for this. Whether you pre-germinate the seeds in two layers of kitchen roll or let them grow directly in soil is entirely up to you. When you place the seedlings in pots, you should use a well-fertilised and airy soil and make sure that the water does not accumulate. Chilli plants need a lot of sun for their development and certain minimum temperatures for the ripening of the fruits. Place them in a suitable spot where they will get at least 6-8 hours of sun and plant them in pots rather than flower pots. This makes it easier to bring them indoors in early autumn on days with temperatures below 12 °C - so the fruits can still ripen despite the sometimes long ripening period.
