Germination and Growing:
The seeds of this plant need temperatures between 20 and 25° to germinate. Until germination, the seeds should always be kept slightly moist, regardless of whether you pre-germinate them or germinate them directly in or on potting soil. It is generally helpful to use a heated mini-greenhouse to increase the germination rate and to provide the seedlings with a favourable climate for their first growth phase. After about 1 to 3 months you should be able to spot the first seedlings.
Harvesting Your own Capers - Directly From the Bush
Originally, the caper shrub comes from Central Asia, but it is now also found in Southern Europe and similarly warm countries around the globe. It also grows well here, but it can only tolerate light frost and should be moved indoors in winter. A bright location at 5-10° is ideal, and in spring the shrub will sprout again and can be returned to the outdoors. Capers prefers lean soil, a sunny location and you should water it only moderately. Between July and August it produces large white flowers with long purple stamens. Harvest the capers later, while the fruits are still closed. You can then pickle them in vinegar and oil and later use them in dishes such as Koenigsberger Klopse or Vitello tonnato and on delicious pizzas.
